ADD SOME SPICE TO THE RECIPE

The yellow field and red symbol colors are the colors of Spain. First brought to New Mexico by Spanish explorers in 1540. On New Mexico's flag we see a red sun with rays streching out from it. There are four groups of rays with four rays in each group. This is an ancient sun symbol of a Native American people called the Zia. The Zia believed that the giver of all good gave them gifts in groups of four. These gifts are:
1.The four directions - north, east, south and west.
2.The four seasons - spring, summer, fall and winter.
3.The day - sunrise, noon, evening and night.
4.Life itself - childhood, youth, middle years and old age.
All of these are bound by a circle of life and love, without a beginning or end.

A LITTLE HISTORY

Franciscan Marcos de Niza and a black slave Estevan explored the area in 1539 seeking gold. The first settlements were at San Juan Pueblo in 1598, and Santa Fe in 1610. Settlers alternately traded and fought with the Apache, Comanche, and Navajo. Trade on the Santa Fe Trail to Missouri started in 1821. The Mexican War was declared in May 1846; General Stephen Kearny took Santa Fe without firing a shot on August 18, 1846, declaring New Mexico part of the U.S. In the 1870's, cattlemen staged the famed Lincoln County War in which Billy (the Kid) Bonney played a leading role. Pancho Villa raided Columbus, New Mexico in 1916.
